From Compliance Law to Ice Cream Dreams

Meet Ashley Fischer, one of the new co-owners of Gray’s, whose path to ice cream royalty was anything but typical. A former compliance attorney, Fischer traded spreadsheets and legal briefs for scoops and sundaes when she and her close-knit family decided to launch a family business together. “We wanted to create a legacy,” she says. “Gray’s was always special to us. So we reached out, and it came together in a really beautiful way.”

In October 2024, the Fischer family officially became the new stewards of Gray’s—an intentional word choice that reflects their deep respect for the historic brand.

“Gray’s is bigger than any one owner,” says Fischer. “We’re here to carry on its story, not rewrite it.”

A Legacy in Every Scoop

y-of-school photos on the stone wall, celebrating birthdays, or simply indulging in a summer ritual. The ice cream itself is still handmade in Tiverton, just as it has been for decades.

That commitment to craft isn’t changing. In fact, it’s being reinforced.

“We still make everything by hand,” Fischer says. “That’s non-negotiable. It’s about quality and consistency—and that’s what people come to Gray’s for.”

A New Storefront in Bristol—And Year-Round Joy

While Tiverton remains the heart of the brand, Gray’s has expanded with a new location in downtown Bristol, at the bustling corner of Hope and State Streets. The new storefront replaces the seasonal window-service spot once located near Thames Street.

The new location has big plans: indoor seating, year-round service, and soon—locally sourced coffee and pastries. As Fischer explains, “We want to be part of the town’s rhythm, not just show up for the summer.”

And Bristol is thrilled to have them. The new store is directly on the historic Fourth of July Parade route, and Gray’s is preparing to scoop their way through the festivities.

“It’ll be chaotic, but so much fun,” Fischer laughs. “We can’t wait.”

Fresh Flavors, Same Foundation

While longtime fans can rest easy knowing classic flavors like vanilla, chocolate, and black raspberry aren’t going anywhere, Fischer and her team are adding creative seasonal specials to the menu—starting with summer.

Expect new flavors like key lime, salted caramel with toffee and pretzels, and more surprises rolled out monthly.

The goal? “Keep it fun, but true to Gray’s,” says Fischer.

And come holiday season, customers can expect festive offerings that match the spirit of the time—bringing joy in cones and cups long after summer fades.

A True Family Business

Ashley isn’t doing it alone. Her brother, husband, parents, and even her store manager—who started at Gray’s at age 14 and is still scooping decades later—are all part of the team.

Gray’s isn’t just a brand with history. It’s a business with soul.

And in that spirit, the Fischer family is committed to supporting other local artisans by sourcing pastries and coffee from Rhode Island vendors. The goal is to elevate the experience while investing in the local economy.
